Recioto della Valpolicella DOP — 85% Veronese Corvina, Corvinone and Rondinella, 15% other varieties. Drying of 120–150 days in wooden trays with a natural weight loss of around 40%. Partial temperature-controlled stainless-steel fermentation, 36 months in new barrels and at least one year in bottle.
Deep ruby turning garnet, plum, cherry, candied amarena and almond, balsamic streak, mint, vanilla, coffee and chocolate.
Dense, great gusto-olfactory persistence, remarkable balance between sweetness and acidity.
